Birthday Cake

I am no baker to say the least.  Despite numerous efforts the majority of cakes and bakes burn in my hands.  But with more time than usual on my hands at the moment and a good friend’s birthday coming up I thought I would have yet another baking attempt.  And finally we have success!

I used a recipe from Cupcakes from the Primrose Bakery which I was given as a birthday present a few years ago and not only was it easy but I was so impressed with the results. I chose the Vanilla Layer cake as I prefer a simple cake rather than anything too chocolatey!  It was a simple sponge cake and rose better than any other recipe I have tried before.  The cake is sandwiched together with butter cream, although next time I might reduce the quantities of filling slightly as it was very sweet.

The birthday girl was definitely pleased with her cake and even said her fussy 5 year old gave it the seal of approval. I’m thinking of other ways to decorate the cake and as my sister has just moved house a ‘welcome to your new home’ cake seems like a good place to start.
